What to expect at a Chinese restaurant
Chinese restaurants in the US range from American-Chinese takeout counters – General Tso’s chicken, lo mein, egg rolls – to restaurants specializing in regional Chinese cooking: fiery Sichuan, Cantonese dim sum and roast meats, Hunan, Shanghainese soup dumplings, Taiwanese beef noodle soup and Dongbei dumplings.
What to order
- Dumplings or bao – a good test of a kitchen’s handwork
- Mapo tofu or dan dan noodles – Sichuan classics with numbing peppercorn heat
- Roast duck or char siu – Cantonese barbecue, often displayed in the window
- Dim sum – served mainly on weekend mornings and lunchtimes
Good to know
- Lunch specials with rice and soup are among the best-value meals in any city.
- Dim sum is busiest on weekend late mornings – arrive early for the widest selection.
- Calling in takeout orders directly is usually cheaper than delivery apps.
